Qahwa is a lighter roast than most specialty drinkers expect, often spiced with cardamom, sometimes with saffron or clove, and served in small handleless cups.
The pour carries meaning. The cup is filled only part way, refilled as long as the guest holds it out, and stopped when the cup is gently shaken. Hospitality is the point; the coffee is the grammar it is spoken in.
For anyone sourcing into the Gulf, this is not trivia — it is the shape of the market.
